My Story

Me!

I was born in Demark and spent my summers in the United States. My childhood passions were horseback riding and dancing. Like many teenage girls I was insecure and struggled with my self-image; particularly regarding my looks, weight, skin and perhaps worst of all, my dyslexia. As a young girl, I was treated by an aesthetician who helped me with my scarring caused by acne. After this experience, I decided I wanted to pursue a career in this field. It was the first time I felt like someone really heard me, and more importantly, could help me.

I started trying to understand what I could do differently to avoid the problems I was experiencing. This was the first time I also began to experiment with diet as means to improve my appearance. My life took a turn at 18 when a friend convinced me to enter the Miss World of Denmark Pageant.

This is it!!

I want you to completely clear your mind and start all over with the meaning and understanding of eating.

I know you have tried everything and I’m sure you have been good at it, giving it your all. Lost a little but it came back so fast, plus you were never satisfied…measuring, counting and weighing. Ugh!!

If I told you to throw all that out would you listen?

I have tried everything and I mean everything! all the fads, I studied nutrition from a very early age, and with that I thought I had it all figured out.. Oh boy was I wrong.

Why were there so many healthy foods out there making someone like me gain weight? I was so confused. I made it my passion and my absolute priority to figure out how to get to a place where I could eat when I wanted, like it and be satisfied. Not easy. It took me 15 years to finally get it.

I started by eliminating everything and slowly adding things back, then wait and see.

I began to realize that a cup of white rice and a cup of brown rice were so far from being the same. Your body will gain weight from the white rice but not from the brown rice. Hmmm, interesting don’t you think? I also found out that dairy fat and animal fat, beans and nuts, were a massive no-no as well.

I must also tell you that eating meat, in my opinion, is really important. I can’t help but wonder what is going on with those people who think that by not eating meat they will lose weight. Listen, it is not the meat that is making you fat. Step away from the processed foods and start eating real food.

Now with that being said, there are some real foods out there that are healthy but also fattening. And if you’re like me, gaining weight from just looking at something, then don’t worry.  I have found the way. No more measuring, weighing or counting calories, or being afraid to eat and then wondering what to do when you’re still hungry.

Now it is not in my nature to put any of this in writing, I would so much rather be there in person to show you, cook with you and have one-on-one time with you to really talk about everything.  But I knew that I had to find some way to share all that I’ve learned over the years, so here I am.

The cooking you are about to do and the tasting you are about to experience will change your life.  It is so easy that once you get started, you’ll see that I really didn’t have much to write about after all.

That is the point of this eating plan — the simplicity of it all. You will love it. It’s not necessary that you read about my life over the past 20 years, and all of the paths taken to get to this place, because if you did, this would be never-ending. And you, as would I, would be screaming, “Just get to the Point already so I can get started!” Am I right?

So here is a list of all the things you can eat, followed by some easy to follow recipes. My suggestion is to focus on what you like and can eat, rather than what you don’t like and can’t bare the thought of eating. This will be fun and exhilarating for you and the people around you.  The food you are about to eat is so tasty (and good for you). Make sure to make extra because the people around you are going to want what you’re eating!

I don't believe in the juice cleanse, any form of shake cleanse or a no eating cleanse, I believe in eating and within this diet you have all the things you need and none of the things you don't, with that your body can let go of any build up such as yeast/candida, it also allows your body to let go of any toxins so your body can work at its optimal level. Organically and naturally by just eating like we were and are supposed to do.
